Well I decided I wanted to make a fermented hot sauce, so i procured all the ingredients to make it. Glass bottler with stopper and airlock, lb of red habs, a fw jalapenos...red and green 5 cloves garlic, juice of 1 lemon, teaspoon of salt, and 3 teaspoons hooch. it took a few days to make the hooch which is just a sour dough starter. cup of bread flour, cup of warm water, dish towel. Mix, leave uncovered for a couple hours, then just feed with more flour and water till it foams up then seperates. Well it finally did this morn, so i pulled some of the juice out and put 3 table spoons to start the fermentation process. So the wife has a batch of sour dough bread doin it's thing on the counter, ya sure can smell it in the next room for sure. We'll see how it comes out, peppers will probably be 45 days from now, but fresh bread this afternoon. If it works once i have some fresh peppers to use I'm thinkin lime and fatalli or datils, hell maybe even 2 different ones. Broke the cam, no pics til I get a new one or someone has one they wanna donate...

10 days or so and it smells goot, kinda mellowing out, hopefully will have some for sap bash...

42 days of percolation so far... smells goot, probably do it up at 60 days...

Well I looked this morn, and it all went S. Damn mold over the top, all of a sudden in <48 hours... Well at least my pepper garden is coming along nicely. I guess I will start over. I do have the starter in the fridge still, so I guess a batch of sour dough is in the works since I need to pull it out anyway... angry.gif
