I had a package of Richard's ( ree-shards)
Tasso in my freezer that I had forgotten all about. I had never cooked with it before, but always heard Emeril rave about it. You know, "Pork Fat Rules!"
Well, tonight I rendered some diced tasso down in a skillet and sweated some green cabbage and red onions in the grease. It really adds a great flavor! Not as salty as bacon. Best part was, the kids loved it!
I found some recipes online and is pretty easy to make at home in the smoker. I will post result when I make a batch.
