2 Cup yellow cornmeal
1 1/2 Tsp. salt
1 Tsp. baking powder
1 1/2 Cup milk or water
1/2 Cup lard or vegetable oil


Mix well: cornmeal, salt, baking powder, milk (or water) and add to hot lard in a 5 quart iron pot over high heat. Let crust form. Stir well and lower heat to simmer. Cover and cook 15-20 minutes. Serve with milk and sugar as a cereal or with Steens Cane Syrup and crisp bacon or sausage.
